The grains of Acquerello rice are grown in the waters of the paddy fields on the Tenuta Colombara, in the province of Vercelli. This unique rice is aged for 1 to 7 years and slowly refined with a process today only used by the Rondolino family. Thanks to a special patent, Acquerello reintegrates the rice germ – rich in nutritional substances - into the grains. This creates more nutritious, firm and flavorsome grains, with good cooking properties, that absorb sauces well.
