Feudo Mondello is a Sicilian artisan pasta factory with a short supply chain with stone mill that exclusively produces wholemeal pasta of the highest quality by transforming the wheat grown in its own fields. The company is located in Sicily in the Belice valley, in an unspoiled area far from industrial settlements and large and small urban centers. Here there has only been agriculture for centuries.
A few days after stone grinding, the wholemeal semolina is transformed into pasta with the use of bronze dies. The pasta is then slowly dried in static cells, where the temperature never exceeds 38 °, to maintain the color, aroma and taste of Sicilian durum wheat. The use of particularly coarse semolina makes our pasta "naturally rough" to better hold the condiments. This production process creates wholemeal pasta with excellent cooking resistance that bring us back to the authenticity of the pastas of the past, the pasta of our grandparents."
