The less valuable part, the shell, traditionally discarded, has been transformed into a new resource for the precious ingredient Colatura di Gambero Rosso. The sustainability of the product lies in the recovery of resources that would otherwise be wasted, the use of local raw materials, the valorization of the local area, and the ability to maintain a business model that combines product quality and respect for the resources used.
