"Cook smarter, not harder": this is the mantra re.garum brings to Taste Firenze. Our mission is to simplify cooking without sacrificing excellence. How? By replacing outdated, artificial bouillon cubes with a practical, 100% natural liquid revolution.
Our flavor enhancers are the modern answer to the demand for taste and speed. Incredibly easy to use—simply add them directly to a finished dish or during cooking—they offer a depth of flavor that chemistry cannot replicate. Unlike industrial products, re.garum is a powerhouse of nutritional value, active enzymes, proteins, and authentic taste.
Our sustainability is real: we craft our elixirs using fresh, yet often overlooked ingredients. Through fermentation, we transform high-quality resources (such as aesthetically imperfect vegetables or premium by-products) that would otherwise never reach the table.

The Team
The project originated at the NOI Techpark in Bolzano from the synergy between Chef Mattia Baroni and co-founder Stephanie Lüpold. Together, they lead a team that combines fine dining and biotechnology, transforming simple ingredients into high-impact culinary tools.
