The great protagonist is – again and without a doubt – the snail.
Now that the extra virgin olive oil has become a full member of Arcenni Tuscany 'brand' a new course has been set and heading straight for wine.
A path of growth that from the beginning - since the family business was born in 2015 as a sort of bet - has always been carried out under the banner of quality, love for the land and its most genuine and authentic products .
Arcenni Tuscany breeds Helix Aspersa Muller snails in Tuscany, in Capannoli, in the Alta Valdera, taking care of the entire snail supply chain from breeding, harvesting and purging, to processing.
The farm area extends over 2.5 hectares, where there are large open-field enclosures dedicated to the reproduction and growth of snails, following a completely natural cycle method.
Here the vegetation necessary for snails to live is sown, recreating the habitat where they reproduce and grow under strict control, following a natural diet.
To date, the birth and growth of this special mollusk takes place entirely in the breeding farm. The animals are collected manually at night without the aid of machinery and left to in special cages in cool and ventilated places for purging and capping.
The company aims to high quality for its products, all strictly made in Tuscany, be it snails sold fresh and ready for cooking or processed and stored in jars.
Pâté, sauces, and many other specialties are recipes with an authentic flavour, without preservatives, created to enhance the great protagonist of the dish: the snail. This is all thanks to a high-quality artisan production that focuses on the raw materials that go alongside the snails: natural and local products such as extra virgin olive oil, tomatoes, leeks, and other ingredients.
The recipes are incredibly versatile, perfect both as an appetizer and as a first or second course.
