In the heart of the North Adriatic Sea, between the clear waters and lagoon landscapes of Caorle (VE), an Italian excellence is born: the Venere oyster, a unique product of its kind, the result of the passion, competence and respect for nature that for years have characterized the work of a group of entrepreneurs, distant in job profiles but united by the passion for the sea and the products that are generated from it. Stefano Rocchi, a promoter with experience in the marine breeding of numerous species of molluscs, is currently assisted in the progress of the company by some partners who have joined him, as Stephen Visentin and Giovanni Musini, motivated by the same passion. The Venus Oyster is not only a delicious mollusc, but the symbol of an ambitious and sustainable project, cultivated with artisanal care in an extraordinary habitat: the open sea of Caorle, classified as a Table A area, that means the highest quality of marine waters according to fish-fauna and sanitery criteria. In this natural environment, where the Adriatic currents transport salt, iodine and valuable nutrients from the rocky coasts of Istria and Dalmatia to the coasts of the Upper Adriatic Sea, the oyster grows according to its biological rhythm. Aquatec applies modern and non-invasive breeding techniques, which respect the vitality of the oyster and enhance its organoleptic qualities. Behind the success of the Ostrica Venere there is the vision of entrepreneurs who have transformed a passion for the sea and Italian cuisine into an activity of high gastronomic and environmental value. His approach combines the millenary tradition of shellfish farming – already practiced in Roman times in the lagoons of the Upper Adriatic Sea– with a discreet technological innovation, which does not alter the balance of the sea, but enhances it. To make the daily work at sea possible there is also Federico Stella and his crew. Captain of the motor ship Perla Nera, professional diver and navigation expert, Federico has a deep knowledge of the marine territory of the Upper Adriatic Sea, having followed Aquatec's activities for many years before dedicating himself professionally and full-time to the Sea Garden project. Under his command, the crew on board operates every day with precision and competence, managing the delicate phases of breeding directly in the field. His figure represents the fundamental link between technique, passion and respect for the sea: a guarantee of quality and safety for every Ostrica Venere. The Ostrica Venere, the oyster of Caorle, is the result of meticulous breeding, which guarantees cleanliness, quality and taste. Thanks to constant maintenance and care work, each oyster develops in a healthy way. The result is a crunchy and sweet pulp, which blends harmoniously with the natural flavor of sea water. However, oysters remain constantly susceptible to climatic and environmental conditions, to which the farmer must also submit, all to underline the extremely artisanal character of the product. Eaten raw, perhaps with two drops of lemon and accompanied by a mineral white wine, the Ostrica Venere offers an explosion of flavors: a perfect balance between sea, freshness and delicacy. It is also ideal cooked, in refined or simple recipes, which enhance its essence. Not only good: the Ostrica Venere is also a healthy and natural food, rich in mineral salts, omega-3 and noble proteins. In addition, its production actively contributes to the protection of the environment: each kilogram of oyster shells allows over 430 grams of CO₂ to be removed from the atmosphere, thanks to the formation of calcium carbonate. In addition, by anchoring the plant on the seabed, an environment suitable for the development of marine flora and fauna has been created.
Raised in the open sea without the use of chemicals, the Ostrica Venere is 100% natural, the result of a low impact process. The name Venere is not chosen by chance: it is a tribute to the goddess of love and beauty, who according to myth was born from a shell that came out of the sea. A reference to the aphrodisiac value that has been attributed to the oyster for centuries, also celebrated by the Venetian Casanova, a well-known admirer of the mollusk. The methods and techniques that today are the structure of the success of Ostrica Venere are also the result of an intense collaboration that exists between a network of oyster farmers who can boast of being the pioneers of breeding in Italy and who have never stopped sharing experiences, ideas, projects and above all knowledge. In addition to Ostrica Venere in Veneto, there are the Sardinian breeders of the Compagnia Ostricola Mediterranea also present in Veneto at Bonello in Sacca di Scardovari, the cooperatives Il Faro and Moromar, the Varano La Fenice cooperative with the Diomedea brand from Gargano in Puglia and Mitilicoltori Spezzini of La Spezia where the first national oyster event is also based: Italian Oyster Fest. The diversity of the environment where the oyster is bred and the sensitivity of the farmer in interpreting the different conditions to apply, with creativity and constancy, the best breeding methods, determine the quality of the shellfish.

o Ideal temperature: 8°C, in a cool environment.
o Position: concave part downwards, to keep the water inside.
o Never in water: immersing them reduces taste and compromises vitality.
