The Colatura di Gambero Rosso® from Mazara del Vallo is a product made with a patented method, born from the idea of replicating the sailors' custom of recovering the heads of prawns that broke during trawling. Pressing the heads of the recovered shrimps, the captain made a tasty dish for himself, seasoned with the juices and eggs present in the carapace. Hence the idea of developing the same product and making it available to all those who love red prawns.
The Colatura di Gambero Rosso® from Mazara del Vallo does not have the flavor of red prawn or bisque but contains the flavor of the carapace (head).
An umami flavour, a taste that goes beyond what we are used to describing as salty, sweet, bitter and acidic. This is followed by products such as red prawn butter and the spherification of Colatura di Gambero Rosso®.
