Bona Usanza is a Marche-based agricultural cooperative, founded in Serra de' Conti in 1996, dedicated to the recovery and promotion of traditional agricultural and food products at risk of extinction. Our cooperative is committed to safeguarding the region's biodiversity and culinary history, with a special attention to typical products derived from local agricoltural tradition. We produces two Slow Food Presidia: Serra de' Conti Cicerchia (an ancient and delicious legume) and Fig Lonzino (a dessert made with dried figs, walnuts, almonds, and aniseed liqueur). In addition to these two excellences, we produce other legumes (chickpeas, lentils, and solfino beans), dried and cooked mixed soups, sapa (cooked must), agresto (a sweet and sour condiment made with sapa), and other specialties! The company philosophy is based on the protection of local products and the opposition to industrialized flavors, promoting tradition and "poor" cuisine.
