Sergio Gavazzeni began his career in the fashion world in 1979, when he and his wife founded the belt company Dora. Today, the company is internationally renowned and collaborates with some of the most important fashion brands.
Approximately 10 years ago, Sergio developed an interest in cooking and began attending numerous courses.
He became particularly passionate about the world of pastry, and despite the demands of running Dora, he decided to enroll in an evening course for pastry assistants. Being a determined and tireless individual, he began nurturing the idea of investing in the pastry industry. This led to the creation of Serge Milano, with the goal of showcasing the quality of his artisanal pastry products to the world. Among his specialties are the Cannoncino Gourmet and macarons. The first store opened in Bergamo, at Orio al Serio Airport.
After a couple of years, the shop became well-established and thriving. However, Sergio’s entrepreneurial spirit was not satisfied, and he set his sights on realizing his dream: opening a store in the heart of Milan.
Sergio wanted to focus on his favorite product: the cannoncino. Though a simple and widely reproduced pastry, his vision aimed for the highest quality combined with innovative ideas. He envisioned creating something truly special to captivate his audience: a display case specifically designed to keep puff pastry at 35°C (using a patented system) and filling the pastries to order with custard or other creams.
This approach ensures the cannoncino tastes as if it were freshly baked: the puff pastry, slightly warm, fragrant, and crisp, pairs perfectly with the custard, which is dense, bold, and rich in flavor.
