Company Profile
We were born, as Salumificio dei Castelli, in 1998 from a long family tradition in the meat lavoration, in the province of Vicenza, between Monti Berici and Lessini, in the town of Montecchio Maggiore, famous for Juliet and Romeo’s castles, that has been our inspiration when choosing our company name.
From the very beginning we focused on the production, with artisan care, of our typical meat products, from traditional of Veneto rural culture: salamis, sopressa – in particular the gourmet “Soprèssa Vicentina P.D.O.” of which we are proud standard bearers – pancetta, coppa, sausages and musetto, not disdaining some more innovative products, aromatised with DOC wines or food ingredients from our land, or adding service contents to our products, such as cookings or smokings.
Our respect and love of the land and its traditions mean that we constantly strive to improve quality and safety, In particular, Careful choice and selection of meats is fundamental for the creation of quality products. Only fresh Italian pork from heavy livestock or selected European beef cuts are used in our products, carefully selected and hand cut, in order to guarantee a high level of qualitative control over our ingredients. Successive production phases incorporate our respect for traditional techniques with the safety and checks of modern technology, with the aim of safeguarding the quality and genuineness of our products. Indeed, our products are safe for the consumer, encased in natural casing, free from milk derivatives, gluten or glutamate.
