More than fifteen years ago the Pasticceria Giotto project came to life, based on a gamble. Today, it is a reality: a professional pastry shop inside a prison that bakes artisan sweets with the rigour that high pastry imposes.
In 2005, we took the pastry shop to the Due Palazzi prison in Padua to work alongside inmates. To date, more than 200 have been guided in a re-training formative path in the art of pastry and beyond. The pastry shop is flanked by the packaging and logistics department where the sweets are dressed and prepared for shipment. What makes all this possible is the work of professionals in the sector who have chosen to carry out their activities in prison. The teams are trained and supervised by our social office which actively collaborates with the prison authorities for the selection and training of prisoners.
