Alchemy is not a science nor mathematics. It is, according to Andrea, a subtle game between cheese, natural ingredients and know how. The affineur selects flavours and aromas to create new, surprising and ever changing cheeses. Instinct and intuition are both needed, as well as knowledge and experience. It is also important to be completely patient as this allows you to look after your cheeses until they reach the smell and the aroma you are after. It is quite difficult to explain a passion, you can only go ahead and taste it.
Time passes relentlessly for everyone and also for cheese. The secret is to grow old with wisdom, gaining taste as time goes by. Andrea is like an attentive father looking after his cheeses, holding their hands until they are ready to go and see the world. When they are young you have to protect them and set up some rules, as they grow older, you have to try to rescue them from illnesses and assure them longevity. It is no coincidence that all De'Magi cheeses have a name as well as character and identity.
This 2022 has seen our parterre of collections grow, from Blue Cheeses, to Specials, to Pecorino with strong aromas, to Freshs, up to conquering second place as the best cheese in the world at the World Cheese Awards and first among the Italians. This drives us to always be ready for new discoveries and experiments, in a sector, like ours, in constant development.
