The Prosciutto da Cinta Senese DOP MAESTA’ 36 months aged and Prosciutto Toscano DOP awarded 5 spilli Eccellenza Italiana (five pins of Italian Excellence) in the guide "I salumi d'Italia" by L'Espresso, are two of the leading products of the RENIERI family, who have been producing typical Tuscan cured meats in the municipality of Poggibonsi (Siena) since the 1964. Theirs is an artisan family-run business, linked intimately to that magical Tuscan territory between San Gimignano, Castellina in Chianti and Siena, which has chosen to make extremely special products, remaining faithful to Tuscan tradition. Particular attention is paid to the authenticity of the products: no additives (nitrites, thickeners, dyes, microbial starters), no food allergens (gluten, lactose, sugars), but lots of respect for natural ageing times in specifically designed, meticulously cared-for environments that favour a natural exchange of air.
The Cinta Senese farms, which are supervised personally by the RENIERI family, have a maximum of ten animals per hectare of land. These animals are allowed to live in complete freedom for at least one year in their natural habitat, making sure that each one receives the necessary balanced diet and the best possible animal welfare. The staple diet of the Cinta Senese consists of acorns. When natural production in the forest is low, their diet is supplemented with the finest cereal grasses, such as corn, barley, wheat, oats and field beans.
