The Pastificio Setaccioro is a company rooted in the long-standing tradition of pasta making in Cava de' Tirreni, the Metelliana valley, the "green gate" to the Amalfi Coast.
The name “Setaccioro” recalls the ancient sieves used for the careful selection of the grain, a symbol of our meticulousness, and the gold, a symbol of the value and color of the precious cereal, emphasizing the excellence of our product.
Setaccioro’s philosophy is based on a few, but essential, principles that guarantee a product of the highest profile.
We use exclusively pure 100% Italian durum wheat semolina, a selected raw material that ensures quality.
Every production phase is meticulously handled in our artisan laboratory, respecting ancient local techniques. Bronze drawing gives the pasta a rough, porous surface, ideal for capturing and enhancing any type of sauce. Slow drying in static cells (from 24 to 48 hours) preserves the nutritional and organoleptic properties of the wheat, guaranteeing perfect al dente hold during cooking and excellent digestibility.
