The Art of Know-How
We work as they did in days gone by, because we know no better way. Our cured meats are born from manual gestures—hand-salting, traditional tying, and brush-applied sugnatura (lard coating)—and we reject all shortcuts. We take pride in our Clean Label: no chemical additives, no preservatives in our long-aged products, and naturally gluten and lactose-free. Only meat, salt, spices, and the Tuscan air.
