Fudiz Lab is a seafood processing laboratory. Our products are made only with selected high quality raw materials and are craftmanship prepared.

We are located in Livorno, Tuscany, in the historic Venezia district, inside the original Fish Market building, with its iconic architecture featuring a pagoda-like loggia, designed by architects Beata di Gaddo and Pietro Barucci and opened in 1973.
We produce fish burgers and fishballs, ready-made pasta sauces, and fresh fish-filled ravioli. We use only high-quality, locally sourced ingredients (100% Tuscan). Our Chef's obsessive search for ingredients is our hallmark, ensuring they are cooked to perfection to bring our customers a high-quality, authentic, safe, and 100% traceable product.
Our products are craftmanship prepared with fresh local fish sourced from boats that deliver to our market, from "Agroittica Toscana" in Piombino and from Maricap Isola di Capraia.
Freezing (Burgers, fishballs, and Fresh Pasta) allows us to maintain the organoleptic and nutritional values, texture, and flavor of our products without the addition of preservatives, additives, or colorings.
Sterilization allows us to preserve the authentic flavor and high quality of our sauces, allowing them to be stored at room temperature until the jar is opened.
