Founded in Smarano, in the heart of Val di Non, Fratelli Corrà is the oldest operating cured meat producer in the province of Trento and one of the oldest in Italy. Its story began in the late 19th century and spans five generations of the same family, who still preserve with passion the recipes, know-how, and techniques of Trentino’s charcuterie tradition.
Now led by Luca and Pio Corrà, the company is a benchmark for those seeking authentic cured meats deeply connected to the mountain territory and its culture. In the family workshop—where the fresh air of Val di Non and the scent of the surrounding forests accompany every stage of maturation—over forty specialties are produced: speck, luganega trentina, carne salada, mountain bresaola, smoked mortandela from Val di Non, and small game salamis made from venison, roe deer, and chamois.
Every product is the result of a short, controlled supply chain, using meat from selected farms and traditional handcrafting methods that respect the natural rhythms of salting, smoking, and curing. Smoking is carried out using natural beech and juniper wood, carefully cleaned and filtered to ensure a light, pure smoke free from harmful substances. This refined traditional method gives the meats a balanced aroma and gentle sweetness, making them light and digestible even for those unaccustomed to smoked flavors.
Spices and aromatic herbs are added with precision according to old family recipes, enhancing the quality of the meat without overpowering its natural taste.
In 2009, the family opened a new 200-square-meter retail space in Smarano, expanding from local artisanal production to wholesale distribution and a thriving e-commerce channel serving customers throughout Italy and across Europe. Alongside its cured meats, Fratelli Corrà also offers a wide range of traditional Trentino specialties: canederli (bread dumplings), game ragù, polenta flours, sauerkraut, honeys, jams, herbal teas, grappas, and local wines.
Tradition, quality, and a deep bond with the land are the values that have guided the Corrà family for over a century. Today, as in the past, every product tells the story of mountain life and of an authentic culinary culture rooted in craftsmanship, genuine ingredients, and respect for nature.
