Castello di Ama is located in Gaiole in Chianti, in the heart of the Chianti Classico area.
The estate was founded in 1976 and is currently led by the second generation, represented by Lorenza Sebasti, CEO. Marco Pallanti has been the winemaker and technical director since 1982.
Today, Castello di Ama owns and manages approximately 75 hectares of vineyards and 40 hectares of olive groves. The land lies at an altitude between 430 and 530 meters above sea level, on clay-limestone soils.
On the hills surrounding Ama, the San Lorenzo, Montebuoni, Bellavista, and La Casuccia vineyards alternate with olive groves on limestone terrain, creating a unique and harmonious landscape.
Castello di Ama Extra Virgin Olive Oil is a nectar that, once tasted, is never forgotten, thanks to its unique and wonderful flavor.
Correggiolo, Moraiolo, Leccino and Frantoio: our hand-picked olives are pressed the same day at our mill to preserve the aromas and nutritional value. The low yield of each plant enhances the quality: between 7 and 10 kilos of olives are harvested from 1 olive tree, which makes approximately 1 litre of oil.
The olive oil is stored in steel containers in an air-conditioned room, away from light and air.
The oil of Castello di Ama is a vivid shade of green. The striking aromas are fruity and fresh, with nuances reminiscent of chlorophyll, while it is fragrant, well balanced and rounded on the palate. The EVOO has a slight spiciness and bitter taste shortly after pressing.
