Castello di Ama owns about 40 hectares of land cultivated with olive trees, from which only Extra Virgin Olive Oil is produced.
The olives are hand-picked and pressed the same day in the estate’s private mill, in order to preserve their fragrance and nutritional value.
Production per tree is intentionally limited to enhance quality and organoleptic characteristics:
from a mature olive tree, between 5 and 7 kilograms of olives are harvested, producing just under one liter of oil.
