The Salvadori family of "Il Cavallino" come from Montescudaio, a small hilltop village a few kilometers from the sea in Cecina (Livorno), Tuscany, where forests, vineyards, and olive groves welcome those who approach.

For a tourist several years ago, it was not difficult to find Pietro with his sons Pasquino and Salvo in their fields, taking care of their olives and grapes, and ready to offer a "taste" of wine to anyone who stopped to chat.

Over time, our olive groves have grown, descended to the valley, covering a good part of the countryside delimited by the places of Montescudaio, Bibbona, and Cecina, some have been renewed, others are ancient.

If you come for a visit in our places, it will not be difficult to see one of us, with the same commitment and passion as always, taking care of the olives.

For a decade we have moved to the countryside of Bibbona, coloring the land with the silver-green of the olive tree while remaining firmly anchored to our origins in Montescudaio, where many of our olives are still pressed in our family's mill.

Extra Virgin Olive Oil "Il Cavallino" has admirers all over the world, as every year, tourists who taste it on the tables of our region, take it with them as a souvenir of Tuscany.
