In the purity of the ingredients and the simplicity of the method, all the richness and unmistakable flavour of the Testarolo, the signature dish of Lunigiana, land of villages and castles, the meeting place between Emilia, Tuscany and Liguria. Forerunners of pasta, as we know it today, and son of the needs and customs of an essentially rural culture, the Testarolo owes its name to the Testi, ancient itinerant furnaces dating back to Ancient Rome: today as then, it is in them that the batter is poured and cooked by the heat of the burning fire.
