The Sapori di Corbara, a reality that is rising through these years; We were born in 2006 in the market of the high quality of tomato preserves solely and exclusively by the astonishing and peculiar properties of our Little tomato of Corbara, or so called Corbarino, that has allowed us to get introduced in the whole wide world.
All of this thanks to our constant and indefatigable operation of selection, protection and development on the territory of our Little tomato of Corbara or Corbarino, that goes from the sorting of the seeds to the planting of the seedlings in our trusted nursery or straight to the farmers in their seed-beds. This process culminates in the transplant of these elected seedlings in the fields .The little tomato Corbarino is cultivated in the open fields, without being irrigated artificially (the plants get water exclusively by the rainwater, when there is some), where the harvesting takes place only twice a year.
This ancient plant is particularly strong, as a matter of fact it grows on a volcanic soil (lapilli or lavic rocks) therefore rich in mineral salts so precious for the alimentation. The growing area is immersed in a microclimate extremely favourable thanks to the perfect sun exposure and to the presence of the sea breeze rich in iodium amidst Corbara and the Lattari mountains, behind Amalfi and its coast. Our way of working faithfully reflects the traditional way of preserving the products, proper to our People.of the growers.
After an accurate selection of all the tomatoes that arrive in the establishment, we check the shape, size, degree of ripeness, consistency, colour, pH and sugar content of every one in order to decide the most opportune utilization for our purposes. The work of selection is exclusively handmade, and the pasteurization is made at 98/100 degrees Celsius for it is right in this process that all the organoleptic properties are fully preserved in all their wholeness. Indeed, at this range of temperature all the proteinaceous properties of the tomato remain undamaged: the lycopene and the betacarotene, which both represent a strong weapon in the prevention of cancer; the pectin, which allows our Corbarino to bond in a magnificent way with pasta and makes it excellent in the preparation of pizza.
