Having disappeared after the collapse of Rome due to centuries-old flooding of its place of origin, the Valdichiana and Valdorcia, between Siena and Arezzo, today the Aglione Gigante represents a revolution in the world of flavours.
This refined and imposing vegetable resembles garlic, but is... a leek, in a concert of flavours that make it unique.
Powerful yet delicate, it digests in half an hour. And unlike garlic, it does not bother the eater or those around him.
It is harvested in July, then slowly perishes until Christmas: that is why we preserve it, the first and only ones in the world, with the addition of just a little organic oil too, to be able to use it for 2 years. Our Aglionepisellone is organic, we grow it without irrigation or fertilisers at 750 metres above sea level in a semi-volcanic terrioire that is also unique, overlooking the Valdorcia.
