Pane & Pace is a brand of the Perrone family that has been active in bread production in Matera for over a century. Three generations of bakers have gone through the entire twentieth century, participating in the changes and revolutions that have transformed Italian society. In an ancient city like Matera, where it seems that time sometimes stops, takes a breath and continues, Bread and Peace has maintained a relationship with the territory and has been able to preserve and protect, innovate and spread knowledge about bread making.
The result is a strong characterization of bread, making it an identity for the community. Lucia Perrone produces traditional bread and biscuits using a traditional wood-fired oven. Professional experience, a sense of responsibility, and careful selection of raw materials ensure the preparation of healthy products.
Pane & Pace project is a manifestation of the commitment to conscious food production to nourish good health and peace in oneself, in families, and in society.
In addition to the production and sale of Bread, the transfer of value of Peace. This is an example of Frugal Management because it works on the 4 dimensions that integrate with each other in a model that is both ancient and modern. The production process can be defined as circular (Cradle to Cradle) with zero impact for both business and environmental sustainability. In fact, the oven is wood-fired and is powered by firewood made from the scraps of underbrush from nearby land. This allows for the re-use of good quality wood and for the recovery of waste from the natural cycle.
The flour and other ingredients used in the production process are of a short supply chain, as the Perrone family buys directly from the cultivators of the Matera territory the different varieties of Senatore Cappelli grains and other local types that are ground in a local artisan mill to ensure the highest quality of product and a constant control of the raw material production to transformation. The oil used for seasoning is extra virgin olive oil purchased from local mills. Tomatoes, potatoes, vegetables and other seasonings are supplied by local farmers and producers, this allows for the reduction of costs, delivery times and Co2 produced for transport as well as feeding the local economy.
After baking bread, focaccia and biscuits with natural materials that give a unique aroma and flavor to the bread and various products, the ash that remains in the oven is collected and used as natural fertilizer in some lands of some farmers and suppliers where vegetables are grown without the use of pesticides or other chemicals and used in the production process.
The bread that is produced will then be sold through the oven itself or at the Pane e Pace retail point. Of course, in some cases not all of the produced bread is sold and therefore the Perrone family eliminates any waste by transforming these products into bruschettas or other bread semi-finished products.
