Since 1990 we have been skillfully producing a delicate Bottarga of excellent quality. This is the first product to which we have devoted years of research to improve its appearance, color and flavor, processing the mullet roes, carefully dosing the sea salt of Sardinia and mixing it with simple gestures, to obtain a golden Bottarga, characterized by the scent of the sea and balanced taste.

With the new brand, IV Regia di Sardegna, we wanted to give greater emphasis to our premium productions. The meaning goes back to the history at the time of the of the Aragon domination in 1326, which introduced new taxes to the fishermen of the lagoon of Santa Gilla and in the other part of Sardinia, forcing them to pay to the Crown of Spain a quarter of the catch, the IV Regia of Sardinia, the best part, fresher and more valuable, of the catch.
