Coda Nera smoked salmon is the result of more than 30 years of intensive research and knowledge.
Coda Nera expresses the perfect synthesis of a traditional product, but at the same time innovative contemporary. Even today its production is still based on ancient Baltic recipes, the master smoker controls personally every step of this process: the handmade filleting, the light salting process, the slow maturing of each fillet, the drying and the light smoking process on bench wood fire hanging the fillets by the tail “la Ficelle method”.
In addition, the appearance of each fillet is checked carefully before packing. To obtain Coda Nera Riserva and Gran riserva we select the exclusive Atlantic Salmon farmed in Skyervøy Island, in the extreme North of Norway where the strong Atlantic currents and the low temperature of the water create the perfect setting for a slow growth of the salmon.
Each salmon farm has a small number of fish in wide setting, providing a natural and sustainable development lifecycle, in respect of the environment and the welfare of the salmon. Coda Nera is an innovative product due to its specific sizing that makes its shape unique.
For this reason, we created a new way of presenting it. From the whole fish we get a large central fillet completely clean. From this exclusive cut, ready for sale, we get smaller fillets that are ideal portions for making elegant and innovative dishes. Coda Nera cutting is a real art, it enhances the taste of the flesh for original and gastronomic recipes of great effect. The particular process, of lateral fatty part removal, ensures taste and lightness.
