Our history as producers of Balsamic Vinegar of Modena begins more than a century ago.
From the same grapes from which he made the wine, great-grandfather Antonio Fiorini began to produce balsamic vinegar at home, as was the tradition in the Modena families.
Taking up this ancient tradition, the Fiorini family has kept the barrels in their attics for years, taking care of them with meticulousness and attention. Today, now in its fifth generation of producers, this family reserve has inspired us to create an Acetaia completely dedicated to the production of balsamic vinegar.
We strive every day to offer excellent products in step with the times, such as the range of our balsamic vinegars from single grape varieties. There is a strong link with the territory and we want to highlight the characteristics of each single grape variety, to satisfy even the most sophisticated consumer.
Out of respect for tradition and for the environment, we were among the first companies producing balsamic vinegar to decide to create an entire line of Certified Organic Balsamic Vinegars of Modena PGI. This has entailed significant research and investments in terms of ingredients, production processes and certifications, but allows us to obtain products of the highest quality in full compliance with the regulations of the organic sector at European level.
We are also proud to say that we are one of the very few companies in the balsamic vinegar scene to have developed a complete DEMETER certified line, coming entirely from biodynamic agriculture.
