Arcenni Tuscany deals with snail farming, breeding Helix aspersa Muller snails in Tuscany, in Capannoli, in the Alta Valdera.
This is a family business, born in 2015 from a bet and now it has become a reality, and it is Antonia who, with passion and determination, takes care of the project on behalf of the family.
The philosophy of this snail farm is to guarantee genuine, natural meat, taking care of the entire snail supply chain from breeding, harvesting and purging, to processing.
The farm area extends over 2.5 hectares, where there are large open-field enclosures dedicated to the reproduction and growth of snails, following a completely natural cycle method.
Here the vegetation necessary for snails to live is sown, recreating the habitat where they reproduce and grow under strict control, following a natural diet.
To date, the birth and growth of this special mollusk takes place entirely in the breeding farm, respecting the seasons and the snails’ natural life cycle. The animals are collected manually at night without the aid of machinery and left to in special cages in cool and ventilated places for purging and capping.
It is nature that dictates the laws of the snails’ development and growth; Man is only there to ensure that everything is done in the best possible way, and it is Arcenni’s passion that makes its products special.
The company aims to high quality for its products, all strictly made in Tuscany, be it snails sold fresh and ready for cooking or processed and stored in jars.
Pâté, sauces, and many other specialties are recipes with an authentic flavour, without preservatives, created to enhance the great protagonist of the dish: the snail. This is all thanks to a high-quality artisan production that focuses on the raw materials that go alongside the snails: natural and local products such as extra virgin olive oil, tomatoes, leeks, and other ingredients.
The recipes are incredibly versatile, perfect both as an appetizer and as a first or second course.
