The legendary Trattoria da Burde, Bib Gourmand 2019 in the Michelin Guide, hosts a special evening dedicated to Tuscan tradition. The elements all feature in the event title, Fuori di cinta 7: the Cinta Senese, Roman artichokes... and the wines from Fèlsina!
Three companies will be contributing to the creation of the menu with their products. Fèlsina, a winery from Castelnuovo Berardenga, at the extremity of the Chianti Classico region, with its wines that have achieved important successes. Salumificio Renieri from Siena brings the tastiest pork meat to the table: the Cinta. The only non-Tuscan contribution comes from Agnoni, a company from Latina that puts love for the land into its marinated vegetables. In the presence of the producers, who will reveal secrets and trivia about their brands, the evening will see a menu packed with tasty dishes. It starts with an antipasto on the counter featuring hand-cut Cinta Senese ham, Tuscan crostino, a selection of marinated vegetables all paired with Spumante Brut Rosé. Two first courses: black cabbage farinata with Cinta Senese soprassata and pici pasta carbonara with Cinta Senese pancetta and wild herbs, accompanied by I Sistri Chardonnay IGT Toscana and Chianti Classico DOCG. For the main course: capocollo with orange and Jewish-style artichoke, with Maestro Raro Cabernet IGT Toscana to drink. Finally, the most traditional local and “seasonal” dessert: schiacciata alla fiorentina paired with Vin Santo Fèlsina Berardenga.
