TASTE, the Pitti Immagine fair dedicated to the contemporary food scene, will take place for its nineteenth edition from 7 to 9 February 2026 at the Fortezza da Basso in Florence. Over 750 companies will take part, offering an updated and in-depth snapshot of food and wine production and culture, balancing tradition and modernity.

Once again, the range of proposals continues to grow. Alongside established names, more than 100 new companies, carefully scouted and selected by our team, will make their debut, presented for the first time to the Taste community.
True Food, as the theme of this edition says, is what our buyers come to Taste to find. Taste has always maintained a strong and distinctive identity within the landscape of food fairs, focusing not only on the products but also on the people and the territories behind them. Taste grows naturally and sustainably thanks to a careful selection of new exhibitors. That’s why, in 2026, we’ve chosen to go straight to the essence of what truly nourishes us: true food. We’ll do this through our exhibitors, and through the valuable insights offered by talks and events designed to inspire reflection and provide new perspectives on the evolving world of food.

WHAT’S NEW IN THE EXHIBITION ITINERARY
Entrance to the nineteenth edition of TASTE will be through Porta Santa Maria Novella. After registering in the Padiglione delle Ghiaia, visitors can begin their journey through the fair’s outstanding food and wine offerings.

At the start of the Taste itinerary – and taking on an increasingly central role – the Padiglione delle Ghiaia will be the main gathering point for visitors, hosting presentations, events and talks, and marking the starting point of the fair experience. At the Unicredit Taste Arena, Davide Paolini with his signature Ring format and many other leading figures from the food world will take the stage. The Taste Talks of this edition will explore the theme True Food across a wide range of perspectives: from education and training to climate change. Meanwhile, in the space dedicated to Filippo – Ristorante a Pietrasanta, visitors will be able to enjoy the restaurant’s iconic Made in Versilia dishes.

The Taste Tour through exhibitors begins on the Top Floor of the Central Pavilion with the world of savory products, then continues on the Ground Floor, and finally leads to the Cavaniglia Pavilion, where the spotlight shines on sweet flavors. Once again, there will be a special area where sweet and savory meet, designed for special tasting moments such as breakfast and snack breaks.

At Cavaniglia, the Taste Spirits section continues to grow, with over thirty labels – including gin, vermouth, bitters, and spirits – confirming its mission to showcase small, single-product producers with unique stories to tell. These are true gems of Italian craftsmanship, where botanicals meet passion and experimentation.

This edition also reconfirms the special area dedicated to “Vini Eroici da Terre Estreme” (Heroic Wines from Extreme Lands), curated by Alvaro De Anna. Among the collaborations are Coldiretti Toscana, Consorzio dell’Olio Toscano IGP and Unaprol, as well as the Consorzio di Tutela e Promozione della Birra Italiana da Filiera Agricola and the publisher Guido Tommasi Editore, who will curate an engaging themed bookshop.

Finally, the eagerly awaited Fuori di Taste calendar will once again bring a series of tastings, themed dinners, meetings, and presentations to Florence’s most beautiful venues, offering food lovers countless opportunities to discover the companies and flavors of Taste.
