Tradition, quality, and love for a timeless product: these are the values that have always inspired and guided the Valserena Agricultural Company, whose history is linked to the Serra family in Gainago since 1879 (we are the oldest Parmigiano Reggiano dairy still in operation).
Since then, Valserena has been exclusively dedicated to breeding Bruna breed cows, whose precious milk is transformed into the cheese known as Valserena's "Di Sola Bruna" Parmigiano Reggiano.
Of all the surrounding areas, it is the dairy for which we have the oldest records: when, in 1925, the Parmigiano Reggiano Consortium was established, the company had been producing this special type of cheese for several decades.
In 2005, the "Consorzio Disolabruna®" was established to enhance products obtained from the milk of this breed, rich in calcium, phosphorus, and characterized by a uniquely exquisite taste and quality.
Since June 2016, the company's products are also certified "NO O.G.M." This guarantees our consumers a commitment to the feeding of the raised animals, which is done only with products grown on the farm or purchased from activities that have chosen to use non-genetically modified products.
Today, l'Azienda Agricola Valserena produces 16 wheels per day, obtained from the milk of its own cows, born and raised on the farm, fed with forage and cereals grown on the 430 hectares of property.
