For more than 60 years, Tosi has been producing cheeses, focus on Gorgonzola DOP. The fundamental choice remains to continue to produce in a totally Artisanal and Traditional way. Everything is produced in small boilers of 600 litres and extracted manually. We age in a static atmosphere, on wooden boards and we create a product that needs a slow maturation. We do not care about the yield but surely about the flavour. We still use the small bassoon for the purge and not the drain table. Of course, we salt by hand all shapes, one by one. We do very simple things, but stubbornly contrary to the general trends, proud to be artisans and to preserve it at every stage. The man is at the base of everything. The man is at the centre of every project, and the ultimate goal is the human touch.
