The Garda Egg Co. farm specializes in the production of high quality organic eggs obtained from special breeds of laying hens. It is located in the municipality of Lazise (VR), on the eastern shore of Lake Garda and was based on the passion of the founder Federica Bin for animals, nature and its rhythms and from the discovery of the reality of naturally coloured eggs, exceptional in beauty and goodness, and in great demand by great chefs, pastry chefs and ice cream makers in search of real gourmet products.
Eggs produced by hens of special breeds in virtuous farms.
The adventure begins. The project finds its perfect space in a new house with lots of land and fresh woods, and, from a distance, the blue line of the lake.Thus the first hens arrive, and then others and still others, all free to forage in the wide and undulating expanses of grass and to rest in the shade under the plants. Beyond the nourishment that they procure themselves from nature,are fed exclusively with certified organic grains.
No artificial crossing or genetic modification to obtain the colours, but the simple and very natural reality of
BIODIVERSITY. In fact, the colour of the egg’s shell depends on a lubricating liquid that is "smeared" on top
to the shell when the egg passes into the final spongy part of the oviduct.
The special breeds of laying hens raised on the estate of The Garda Egg Co. farm are Araucana, Plymouth Rock, Olive Egger, Marans, New Hampshire, Cream Legbar, White Livornese and Red Livornese.
THE GARDA EGG CO. EGG PASTA has been combined with the exceptional goodness of organic eggs, stone-ground fresh flours from certified organic farming, sometimes even biodynamic, among others which we find wholemeal flours, and ancient grains. The pasta shapes produced are seven. The short pasta is bronze extruded in order to obtain that perfect roughness typical of artisanal products and ideal for sauces.
