SANTA RITA BIO was founded in 1964 as a cooperative dairy. Today, we are a company that ages, refines, and produces exclusively Organic Parmigiano Reggiano, including cheese made solely from the milk of the White Modenese Cow (a Slow Food Presidium).
In our natural aging warehouse, we nurture cheese wheels for up to over 200 months. We define these as "meditation cheeses," which are perfect for pairing with "meditation wines."
Today, Santa Rita Bio promotes and markets Organic Parmigiano Reggiano, including the variety made exclusively with White Modenese Cow milk (Slow Food Presidium), available in various maturations: 18, 24, 36, 48, 60, 80... all the way up to 200 months!
Since 1992, close collaboration with local farms and breeders has enabled us to create a complete Organic supply chain, certified by AIAB/ICEA.
Santa Rita Bio promotes and markets "Il Maschio," an Organic Parmigiano Reggiano made solely with the milk of White Modenese Cows (Slow Food Presidium).
The milk of the White Modenese Cow (Slow Food Presidium) is particularly suitable for cheesemaking and processing into Organic Parmigiano Reggiano. This is due to the optimal ratio of fat to protein and the high presence of the kappa-casein fraction, which favors rapid and resistant milk coagulation.
There were 240,000 heads of this historic breed in the 1940s. By the late 1990s, fewer than 1,000 remained, and the breed was officially considered extinct.
Thanks only to the "Custodian Breeders" (Allevatori Custodi), a project was launched in 2005 by the Province of Modena and the Slow Food Association titled: "Let's Save the Modenese."
The White Modenese Cow (Slow Food Presidium) produces between 9 and 12 liters of Organic milk per day (one-fifth of the production of a conventional Friesian cow).
The production of Organic Parmigiano Reggiano using only Organic White Cow milk is extremely limited: only 1 "Maschio" wheel per day. Approximately 80 dairy cows are raised across 3 Organic farms.
The Organic Parmigiano made from the White Modenese Cow (Slow Food Presidium) is truly "unique."
