Replaced in the mid-twentieth century by higher-yielding cereals, for consumption and production requirements, at the obvious expense of quality itself, the mix of ancient grains carefully selected and cultivated by us retains a fragrance and a taste totally unique, impossible to find in products of large distribution.
This unmistakable, authentic and rich in nuances taste finds its maximum expression in our testaroli. The result of a fully organic production chain, carefully controlled by us at every step, from seed to table, our organic testaroli of ancient grains represents all the fertility and strength of a sincere meeting between tradition and innovation, between memory and constant research. Made with stone-ground flour, our Testaroli bring the richness of an extraordinary territory, Lunigiana, an historical region at the foot of the Apennines, the meeting place between Emilia, Liguria and Tuscany. It is precisely from this land that our work begins.
