It is said that in the old pasta factories of the Sannio region, where work continued late into the night, a plate of pasta was always left ready for the Mazzamauriello. This was an ancient tradition to gain favor with the sprite and ensure a smooth pasta production. If the plate was left out, the sprite would make sure everything ran perfectly: the tools wouldn’t break, the flour wouldn’t spill, and the pasta would always turn out perfect.
