"Mafalda" is the oldest larder in Colonnata, already in existence in 1930, when 'lard' was just the poor man's bread for the marble quarrymen. Even for Colonnata lard, it is always necessary to identify the producer because each producer has his own use and quantity of ingredients for processing and curing the product. Ours is made up of inalienable rules that have been consolidated for four generations.
In 2003 "Mafalda" obtained the IGP certification and the EEC stamp that certify the quality of the raw materials, the particularity of the processing and the originality of the product, which is the result of the millenary culture of the quarrymen of the Carrara marble quarries who have been able to preserve intact the link with nature and preserve the ancient wisdom of the use of aromatic herbs, spices and the right maturation times.
