Our story is a fascinating tale rooted in passion and family tradition. It all began with grandfather Carmine, a passionate buffalo milker from the Sele plain, a fertile region in Campania renowned for the production of buffalo milk, the key ingredient in the celebrated buffalo mozzarella.
The Beginning of a Tradition
Grandfather Carmine, born and raised in the Sele plain, developed a deep bond with buffalo from a young age, the powerful and generous animals that provided the rich, creamy milk so prized throughout Italy. Every morning at dawn, Carmine went to the pastures to milk the buffalo, working with dedication and respect for the animals and the land around him. His passion for this craft was palpable, and over time he passed on this love of milking and buffalo milk to his son, Cosimo. Passing on a Passion
His son, Cosimo, growing up surrounded by the scent of freshly drawn milk and the tales of an ancient craft, enthusiastically embraced his father's legacy. However, the young man didn't simply follow in his father's footsteps; his creative mind began to imagine new ways to enhance that precious buffalo milk. This is how the idea of creating a unique product, capable of combining tradition and innovation, was born: buffalo milk YEAST.
Elia and Orsola, Cosimo's children, grew up listening to their grandfather Carmine's stories and watching their father work with passion and dedication. They decided to follow in his family's footsteps, but with their own vision, focused on continuous innovation and the pursuit of excellence.
They dedicated themselves, and still dedicate themselves, passionately to the search for increasingly premium ingredients for their products, exploring different regions to discover the finest candied fruit, the purest flours, and other exquisite ingredients. For them, attention to detail and the meticulous selection of ingredients are essential to preserving and enhancing the product's excellence.
