Antonello Egizi digs, explores and brings back flavours stored in the drawers of his memory. He focuses on spirits and finds hundreds of them: spiced, agricole or wild rums, the most aromatic or dry gins as well as centuries-old spirits recipes created by Carthusian monks. He wanders through the Apennines or the Alpine pastures and dives into the evocative scents of mountain flowers and aromatic herbs: helichrysum, sweet clover, cornflower, marigold... Old memories re-emerge from his archives such as those of cocoa cultivated on the islands close to the Equator line or that of Kentucky tobacco from Tuscan plantations. Antonello finds a way to perfectly combine these ingredients and casein. He addresses time and asks him how he intends to transform these elements. Each cheese wheel is carefully looked after through every stage of refinement as it gradually assumes notes and aromas that did not exist before.
