Founded in 1925 by Ermelindo and Letizia, it is now a reference point for organic olive farming in Maremma. Located between Venturina Terme and Monterotondo Marittimo, the farm lies on unique, thermal lands, nourished by underground thermal waters, which impart extraordinary qualities to the olives.

Spanning 30 hectares of olive groves, some of which are centuries-old, il Bottaccio follows strictly organic methods that respect the local environment. The thermal soils, along with the favorable climate and terrain, create the perfect conditions for olive cultivation, producing prized fruits that turn into a rich, fruity extra virgin olive oil. These natural conditions give the oil its distinctive organoleptic characteristics, making it a truly authentic and high-quality product.

The farm’s focus is the production of high-quality organic extra virgin olive oil. The entire production process—from cultivation to milling—is designed to ensure the highest quality and sustainability. No chemical pesticides or fertilizers are used; only organic fertilizers that respect the local ecosystem. The olives are harvested manually or semi-manually, ensuring they reach the mill as quickly as possible to preserve freshness and quality.

Once harvested, the olives are cold-pressed within 8 hours to maintain their full flavor and beneficial properties. Every stage of production is carefully monitored to ensure the oil retains its unique taste and characteristics.
