The Cascina Fiume farm is in Carmagnola, a municipality in the Metropolitan City of Turin in the Italian region Piedmont. The
town is mainly agricultural and is located on the right side of the Po River. The landscape is flat, with harsh winters and hot, sultry summers. Since the early 1900s, Tachis family settled in a little borough called Casanova, devoting themselves to the agriculture. Today
the family tradition is still alive, thanks to the willing of Antonio’s sons to continue their father’s work both in the breeding of
livestock and in the cultivation of peppers. The exceptional combination of climate and soil of this land give to the famous vegetable unique organoleptic characteristics, in particular its sweetness and thickness of the pulp.
In addition to peppers, we grow and process tomatoes, aubergines, courgettes, apricots, plums, cherries, peaches, pears, and
hazelnuts. We have been processing our fine vegetables since 2002 in our own laboratory; it was built by recovering an old stable that
had not been used for a long time.
Processing our vegetables in our own laboratory allowed us to revive ancient and traditional pepper-based recipes (baked peppers, sweet and sour peppers, antipasto) and to make them available all year long.
We do not use artificial preservatives; instead, we apply natural methods that guarantee the genuineness of the product and its preservation, starting with healthy raw materials, working in a clean, hygienic environment, and pasteurising our preserves (as Grandma Agnese used to do during the summer, preparing jars of antipasto and jams for the winter). Nowadays, we can find again on our table the same scents and flavours that our grandparents savoured by the fireplace, when
the harsh Piedmontese winters and the passing of the seasons did not allow to cultivate nor harvest fruit and vegetables. In that moment, the jars carefully kept in the cellar became the only food available before the return of the spring
