Capriz is more than a handmade artisan cheese of outstanding quality from Alto Adige/ South Tyrol. The cheesefactory Capriz combines the cheese dairy, the cheese adventure world and the shop into one experience for every sense. The beginning of a tradition.
Our soft, semi-hard and hard cheeses are produced in our cheese dairy in 39030 Vandoies (Val Pusteria valley) and mature there or in a natural stone cave/bunker cavern a few kilometers from the cheese dairy. The cavern maintains a constant temperature of around 10° C and almost 100% humidity all year round. Extreme conditions and the best prerequisites for the finest hard cheeses with a creamy texture.
The milk used to make our cheese specialties (cow or goat) comes 100% from South Tyrol/Alto Adige region and is collected daily from the surrounding farms.
The farms are situated at over 900 meters above sea level and therefore guarantee us genuine and nutritious mountain milk.
Our cheese dairy has been in existence for over 10 years and is dedicated to the production of the finest cheese specialties based on the French model (with mesophilic cultures) in accordance with the vision of our company owner Mr Heiner Oberrauch (Oberalp/Salewa Group). Our main market is South Tyrol where we supply delicatessens in the tourist areas. We also work with a number of HORECA partners who supply our products to high-end hotels and restaurants worldwide. We also supply delicatessens in Germany, Austria, rest of Europe as well as the UK and Canada.
