Who is Casa Graziano?

Mr. Graziano Casa is a real man who, together with his wife Luisa, realized his dream by opening his own ham factory in 1976. Today, his sons Simone and Andrea run the business. We are the Casa family: a young company that combines artisan tradition with new technologies with the goal of producing the highest quality Parma ham.
We primarily serve the retail and wholesale sectors, as well as anyone in the food industry looking for a quality product that can create added value and stand out in their target market in Italy or abroad.
We are lucky to work within the UNESCO Biosphere Reserve of the Tuscan-Emilian Apennines, on the edge of a natural park 30 km from Parma, in the rolling hills surrounding the Ducal city. This healthy and authentic environment is just as healthy and authentic as our dry-cured prosciutto, made from select Italian heavy pork legs to which we add only a little sea salt.
Since Roman times, sea salt has been the only ingredient added to the prosciutto made in our valleys, now better known as Prosciutto di Parma DOP. No nitrites or nitrates added, a gluten-free product perfect for any diet and a source of excellent natural protein. We have a very short list of ingredients: Italian pork leg and sea salt, and then we can say that the other ingredients we need are three: hill air, time, and passion.
In our seasoning basement, we have 64 windows that we open regularly depending on the weather conditions to ensure a slow and natural seasoning process. We age our hams naturally in our basement for a minimum of 18 months and up to 36 months. Different seasoning to satisfy different tastes and needs. With our patient and careful work, we personally guarantee the quality and authenticity of our prosciutto. Now all you have to do is try it and be won over by its flavor, which, as we said, we like to describe as "Sweet like a Kiss." We look forward to seeing you at Taste.
