The ANTICA MASSERIA CAROLI SRL is located in a big “Masseria”, situated on the hills in the area of the “Trulli” and the typical “Masserie”. Thanks to the old experience of the Caroli’s family, further to the olives of its 60 hectars of the Masserie  "Monte Trazzonara" e “Pezze Mammarelle",  selects even the olives of the nearest zones. It produces, then, different varieties of extra-virgin olive oils, that vary each other thanks to a careful selection of the cultivars and also to its old experience. The production of the olives comes for 90% from the hills of the Apulian Murgia. The olives used at most are: Ogliarola, Coratina, Frantoio, Leccino, Pechioline, Carolea and Olivastra, well-known as “olive rossa” typical of Martina Franca.
