The story of the craft brewery Aries is one of passion for artisanal beer production. It began as an idea to indulge a small personal pleasure, which soon turned into a daily reality. After over a decade of enthusiastic homebrewing, followed by a specialized course, the brewery was born. Aries was established in the summer of 2018 in Fucecchio, in the province of Florence, thanks to the determination, willpower, and passion of Daniele, the “Brewer.” Here, we continue to cultivate our love for this ancient beverage.

We produce our beers without any additives or preservatives. Only nature and passion make our beers genuine and authentic, a true expression of dedication and endless passion for quality products.
Our beers are unfiltered, unpasteurized, and free from processes that could compromise the integrity of the carefully selected raw materials. We allow natural maturation, respecting the time necessary for proper fermentation. Daniele has put into practice the knowledge gained from his homebrewing experience, driven by his curiosity to understand the characteristics of raw materials, experimentation, and specific processes. His commitment to preserving and maintaining the properties of the ingredients has been reinforced through specialized courses, enhancing his expertise.
The production process involves working with raw materials at every stage, from selecting and milling barley to mashing, filtering, whirlpooling, adding yeast, and fermentation. The first fermentation takes place in a tank, followed by a secondary fermentation in bottles or kegs. Every step of the process is carried out in-house at our brewery.
Despite the challenges faced during the pandemic, the brewery has continued its operations without compromising product quality. Alongside this, we have embraced new digital skills to keep the business aligned with current market demands. This includes the launch of an e-commerce platform and an active social media presence via the @birrificioaries feed, supporting both the laboratory and the adjoining retail shop. We are also ready to regain traction in the restaurant sector, which had experienced a significant slowdown during this critical period.
