Stone-ground Tradition
In the heart of Salento, where the sun meets the stone and the sea breeze brushes through golden wheat fields, Agrimò grows and transforms ancient grains following the methods handed down through generations of Southern Italian farmers. A family-run farm and artisanal mill, Agrimò combines sustainable agriculture, stone milling, and craftsmanship to produce flours, pasta, bread, and traditional baked goods.
From field to finished product, every step of the process takes place in-house.
We cultivate our own grains, mill them slowly on stone to preserve the wheat germ, and prepare our doughs with natural sourdough, bronze dies, and slow drying at low temperatures (<40 °C). The result is a collection of products that tell the story of pure ancient grains, the authentic flavors of Salento, and the nutritional richness of the land they come from — nonna-approved!
Our Products:
1) Organic artisanal pasta – bronze-drawn, slow-dried, made from locally grown, stone-milled semolina.
2) Wholemeal flours and semolina – rich in fiber, low in gluten, ideal for natural bread and pastry making.
3) Traditional baked goods – “frise”, “taralli” and typical Salento biscuits, baked with extra virgin olive oil in traditional stone ovens.
All Agrimò products are 100% natural, free from additives or chemical residues, as certified by independent accredited laboratories. Over 90% of our semolina is produced internally, while the remaining share is sourced from local farms, ensuring complete traceability and zero pesticides.
Today, Agrimò represents a new way to experience tradition: a form of natural luxury, where slowness, authenticity, and honest craftsmanship meet the taste and sensibility of modern gastronomy.
