The 28 Pastai pasta factory was established in the same building that was the old “Mulino e Pastificio Emidio Di Nola” (Emidio Di Nola Mill and Pasta Factory) in the early 1900s, in the same establishment overlooking the Valle dei Mulini. Pasta is tradition, and our challenge has been to be innovative while maintaining authenticity. The semolina we use for 28 Pastai is a careful selection of the best Italian durum wheats that grow along the central Adriatic coastal region, between Abruzzo and Molise, on the Frentane hills. After more than a year of research, the result is an exclusive durum wheat flour custom blend for 28 Pastai from Zara Cereali, who controls the wheat from the field to the milling stage and who shares with us the value of transparency and the desire to guarantee safe, healthy and excellent quality Italian ingredients to the consumers.
We can tell you about the wheat origin, the slow at low-temperature drying of our pasta, but we prefer to prove it to you thanks to the traceability of our supply chain, the location of the wheat fields where our semolina comes from, and the drying temperature and time certified in blockchain. 28 Pastai chose maximum transparency for the most demanding consumers, in fact it is the first Gragnano pasta with supply chain traceability. Each packaging has his own QR code, so you can check with your phone the 100% wheat origin and discover at what temperature and for how many hours that specific batch of pasta was dried. 28 Pastai prefer to prove it with certified data, from farm to table.
28 Pastai is made with a special technique which creates a protective film (glutinous network) that retains the starch, making the pasta more digestible and with a lower glycemic index.
28 Pastai, however, is free-pesticides and glyphosate certified by Bureau Veritas, to guarantee a healthy pasta dish.
