In 2021, Salumificio Gerini SpA, a company active since 1882 in the world of meat and charcuterie, decided to create Giò e Giuà, a start-up company that intends to debut on the market with a line of high-end sauces.
The recipes are those resulting from the meeting between Giovanni Gerini - Alessandra and Antonella Gerini's grandfather, a Tuscan butcher - and Giovanni Fiorillo, Neapolitan by birth, worker in the meat industry and guardian of the Neapolitan tradition.
The secrets handed down by the two grandfathers to Alessandra and Antonella Gerini and to Tonino, Fiorillo's grandson and great connoisseur of the culinary world, were retrieved from the letters the two grandfathers had written to each other. These were honed into recipes that exalt the Florentine and Neapolitan styles with a special focus on the search for excellent raw ingredients to bring to table the tastes and aromas of the kitchens of bygone days.
This has resulted in 7 sauces - one for each day of the week - that belong to the history of Italian cuisine, flavours full of character, prepared with ingredients of the finest quality.
Sauces with recipes that had almost been lost, which were not available on the market due to their peculiar, complex and time-consuming preparation, but with an intense and unique flavour. Here are our handed-down and rediscovered flavours.
