The mountain is the fulcrum of everything: our idea, our pasta, was born from her.
We cultivate our land between 600 and 1000 meters above sea level, in the uncontaminated territory of the Sibillini Mountains. Water and air of absolute purity, the difficult challenge of a harsh and severe climate, and snow in winter to protect our precious crop.
We only choose late durum wheat, noble and ancient varieties, which have their roots in our tradition, where quality comes first.
We believe in simplicity and craftsmanship: water, mountain
wheat, bronze drawing and drying at low temperatures. Ingredients of excellence and care in processing, which are reflected and enhanced in the characteristic and unmistakable flavor rich in aromas, in the cooking resistance and in the excellent digestibility.
