Ingredients for 4 people:
1 pack of Friscous Petramarè150gr of Ventresca di Tuna Testa
100 gr of horse mackerel fillets
20 cherry tomatoes
1 bunch of coriander
1 lemon (juice and peel)
1 orange (juice and peel)
2 cucumbers
Ursini Lemon extra virgin olive oil
Salt and Pepper To Taste. Natural water Plose
Method
Wash the vegetables with plenty of water. Peel and grate the cucumbers. Divide the cherry tomatoes in two parts. Roughly cut the coriander. Grate the citrus peel and squeeze them.
Put the friscous in a large bowl and soften with Plose water and citrus juice, flavoring with the grated peel. Combine all the ingredients and the chopped Testa fish. Season with Ursini lemon oil, salt and pepper to taste.
Serve with a glass of frozen Via dei Birrai beer.
